Scale model building is an old but sometimes intermittent hobby of mine, I like to build old Airfix kits, navy planes and whatever looks interesting enough, mostly in 1/72nd scale. Usually the older the better, I lose my interest quickly past the mid-1980's designs it seems.

Out-of-the-box is very often good enough for me, I don't think it should be a bad thing if you can detect the original kit brand from the finished model. Modifications are usually just small things like decals or improved detail parts rather than major surgery or scratchbuilding.
